BBQ Jersey Royal Skewers
Ingredients
500g Jersey Royal Potatoes
4 shallots (peeled and halved)
150g button mushrooms (sliced)
Handful of chopped parsley
Splash of rapeseed oil
Freshly ground sea salt and black pepper
Method
1. Start by mixing the sliced mushrooms, halved shallots, chopped parsley and oil in a large bowl. Set aside.
2. Par-boil the new potatoes for five minutes, drain and add to the large bowl.
3. Mix together and allow to cool slightly before threading onto skewers.
4. Sprinkle with a little sea salt.
5. BBQ for about 10 minutes turning occasionally.
